Ingredients:
- 1 lb ground beef (or turkey/chicken)
- 1 packet taco seasoning (or DIY: 1 tbsp chili powder + 1 tsp cumin/garlic/onion powder)
- 1 (15 oz) can black beans, drained
- 1 (10 oz) can diced tomatoes with green chiles (Rotel)
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 cups crushed tortilla chips (or Fritos)
- 1.5 cups shredded cheddar cheese
- Toppings:
- Shredded lettuce
- Diced tomatoes
- Sour cream
- Sliced jalapeños
- Avocado
Instructions:
1️⃣ Brown the Meat
- Cook ground beef until no pink remains. Drain fat, then stir in taco seasoning + ¼ cup water. Simmer 5 mins.
2️⃣ Layer the Casserole
- In a greased 9×13-inch dish, layer:
- Crushed chips (1 cup)
- Beef mixture
- Black beans, corn, tomatoes
- Cheese (1 cup)
- Remaining chips
3️⃣ Bake & Serve
- Bake at 375°F (190°C) for 20 mins. Top with remaining cheese, bake 5 more mins.
- Let cool 5 mins, then add fresh toppings (lettuce, tomatoes, etc.).
