Ingredients

2 lbs boneless, skinless chicken thighs (or breasts)

1 (20 oz) can crushed pineapple (undrained)

1 cup BBQ sauce (use Hawaiian-style if available)

¼ cup low-sodium soy sauce

¼ cup brown sugar

2 cloves garlic, minced

1 tbsp fresh ginger, grated (or ½ tsp ground ginger)

1 bell pepper, diced (red or green)

1 small onion, diced

1 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Instructions
1. Slow Cook:

Place chicken in the crockpot. Add pineapple (with juice), BBQ sauce, soy sauce, brown sugar, garlic, ginger, bell pepper, and onion. Stir gently.

Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until chicken shreds easily.
2. Shred & Thicken (Optional):

Remove chicken, shred with forks, and return to the pot.

For a thicker sauce: Mix cornstarch + water, stir into the crockpot, and cook on HIGH for 10-15 minutes.
