Ingredients:

3 cups mashed potatoes (leftover or freshly made)

1 large egg

½ cup shredded cheddar cheese (or mozzarella)

2 tbsp butter, melted

2 tbsp Parmesan cheese

Salt & pepper, to taste

½ tsp garlic powder (optional)

½ tsp paprika (optional, for color)
For Filling (choose your favorite):

Cooked bacon bits OR sautéed veggies OR shredded chicken

Extra cheese for the center
Garnish:

Fresh parsley or green onions, chopped
Instructions:

Prep the Mashed Potatoes:

Preheat oven to 400°F (200°C).

Mix mashed potatoes with egg, cheddar, butter, Parmesan, garlic powder, paprika, salt, and pepper.

Shape the Nests:

Line a muffin tin with parchment liners or grease well.

Spoon the potato mixture into each cup.

Use the back of a spoon to press down in the center, forming a “nest.”

Bake for 15–20 minutes until golden and slightly crisp on the edges.
