1 sheet puff pastry (thawed if frozen)

1 tablespoon olive oil or butter

2 cloves garlic, minced

1 small onion, finely chopped (optional)

2 cups fresh spinach (or 1 cup frozen, thawed & drained well)

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for a little kick)

½ teaspoon dried oregano or Italian seasoning

½ cup ricotta cheese (or cream cheese)

½ cup feta cheese, crumbled (or mozzarella for milder flavor)

1 egg (for egg wash)

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Cook spinach filling

Heat olive oil in a pan, add onion (if using) and sauté until soft.
