Ingredients

2 cups (250g) all-purpose flour

½ cup (100g) granulated sugar

1 tbsp lemon zest (about 2 lemons)

2 tsp baking powder

¼ tsp salt

½ cup (115g) cold unsalted butter, cubed

¼ cup (60ml) fresh lemon juice

¼ cup (60ml) heavy cream (or whole milk)

1 egg

1 tsp vanilla extract
For the Glaze (Optional):

1 cup (120g) powdered sugar

2 tbsp lemon juice

1 tsp lemon zest
Instructions
1. Prep & Preheat

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Make the Dough

In a bowl, whisk flour, sugar, lemon zest, baking powder, and salt.

Cut in cold butter with a pastry cutter (or fingers) until mixture resembles coarse crumbs.

In another bowl, mix lemon juice, cream, egg, and vanilla. Pour into dry ingredients and stir until just combined (don’t overmix!).
3. Shape & Bake

Drop 1/4-cup scoops of dough onto the baking sheet (or roll into balls and flatten slightly).

Bake 12-15 minutes until edges are golden. Let cool 5 minutes on the tray.
4. Glaze (Optional)

Whisk powdered sugar, lemon juice, and zest until smooth. Drizzle over warm biscuits.
