Here’s a classic Smothered Pork Chops recipe — juicy, pan-seared chops simmered in a rich onion gravy. Perfect with mashed potatoes, rice, or cornbread!

4 bone-in pork chops (about 1 inch thick)

2 tbsp vegetable oil or butter

1 cup all-purpose flour (for dredging)

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp black pepper

1 tsp salt (adjust to taste)
For the Onion Gravy:

2 tbsp butter or oil

1 large onion (sliced)
-
2 cloves garlic (minced)

2 tbsp flour (from dredging)

2 cups chicken broth (or beef broth for richer flavor)

½ cup heavy cream or milk (optional, for creamy gravy)

½ tsp thyme (dried or fresh)

Salt & pepper to taste

1. Season & Dredge the Pork Chops

In a shallow dish, mix flour, paprika, garlic powder, onion powder, salt, and pepper.

Coat pork chops in the seasoned flour, shaking off excess. Save about 2 tbsp of the seasoned flour for the gravy.
2. Pan-Sear the Chops

Heat oil/butter in a large skillet over medium-high heat.

Sear pork chops 3–4 minutes per side until golden brown (they don’t need to cook fully yet). Remove and set aside.
3. Make the Onion Gravy

In the same skillet, add butter and onions. Cook 8–10 minutes until golden and caramelized.

Add garlic and cook 1 minute.

Sprinkle in the reserved flour, stir, and cook for 1–2 minutes.

Slowly whisk in broth, stirring until smooth. Add thyme, then simmer 5 minutes.

Stir in cream (if using) for a rich gravy.
4. Smother the Pork Chops

Return pork chops to skillet, spoon gravy and onions over them.

Cover, reduce heat to low, and simmer 25–30 minutes until chops are tender and fully cooked (145°F / 63°C internal temp).
5. Serve

Spoon gravy generously over chops.
