Savory Meatloaf with Caramelized Onion Gravy

Ingredients
For the Meatloaf:

1 ½ lbs ground beef (80/20 blend for best flavor)

½ lb ground pork (or use all beef if preferred)

1 cup breadcrumbs (or crushed crackers)

1 small onion, finely diced

2 cloves garlic, minced

1 large egg

¼ cup ketchup

2 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp smoked paprika

1 tsp salt

½ tsp black pepper
For the Caramelized Onion Gravy:

2 large yellow onions, thinly sliced

2 tbsp butter
-
2 tbsp olive oil

2 tbsp all-purpose flour

2 cups beef broth
-
1 tbsp balsamic vinegar (optional, for depth)

1 tsp soy sauce

Salt & pepper to taste
Instructions
Making the Meatloaf:

Preheat oven to 375°F (190°C).

In a large bowl, combine ground beef, pork, breadcrumbs, onion, garlic, egg, ketchup, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix gently—don’t overwork the meat.

Shape into a loaf and place in a greased loaf pan or on a baking sheet.

Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

Let rest for 10 minutes before slicing.
Making the Caramelized Onion Gravy:

While the meatloaf bakes, heat butter and olive oil in a skillet over medium-low heat.

Add onions and cook slowly, stirring occasionally, until deeply golden and caramelized (25-30 minutes).

Sprinkle in flour, stir to coat onions, and cook for 1 minute.

Gradually whisk in beef broth, scraping up any browned bits.

Add balsamic vinegar and soy sauce, then simmer until thickened (5-7 minutes). Season with salt & pepper.
Serving:
