Ingredients (serves 6–8)

2 ½ lbs (1.2 kg) golden potatoes (Yukon golds work best)

2 tbsp butter

1 small onion, finely chopped

3 cloves garlic, minced

2 tbsp flour

2 cups whole milk (warm)

1 cup heavy cream

1 tsp Dijon mustard (optional, adds depth)

1 tsp salt (to taste)

½ tsp black pepper

½ tsp thyme (or rosemary, optional)

1 ½ cups shredded Gruyère or cheddar cheese (divided)

½ cup grated Parmesan cheese

2 tbsp fresh parsley or chives, chopped (for garnish)

Prep Oven & Potatoes

Preheat oven to 375°F (190°C).

Peel (optional) and slice potatoes thinly (⅛ inch). A mandoline works best.

Make Creamy Sauce

In a saucepan, melt butter. Add onion and sauté until soft.

Stir in garlic, then flour; cook 1 minute.

Slowly whisk in warm milk and cream until smooth and slightly thickened.
