Peanut Butter Cookie Bars 🍪
Ingredients:
- 1 cup (250g) creamy peanut butter
- ½ cup (113g) unsalted butter, softened
- 1 cup (200g) packed brown sugar
- ½ cup (100g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1½ cups (180g) all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup (180g) chocolate chips (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
- Cream together peanut butter, butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
- Mix in eggs and vanilla until fully combined.
- Whisk together flour, baking powder, and salt, then gently fold into the wet ingredients until just combined.
- Stir in chocolate chips (if using).
- Spread batter evenly into the prepared pan.
- Bake for 25–30 minutes, or until the edges are golden brown and the center is set (it may still look slightly soft but will firm up as it cools).
- Let cool completely before slicing into bars.
Tips:
- For extra gooey bars, slightly underbake (25 minutes).
- For a crunchy twist, add chopped peanuts or Reese’s pieces.
- Gluten-free? Use a 1:1 gluten-free flour blend.
