1 lb smoked sausage or Italian sausage (sliced ½” thick)

1 bell pepper (any color), chopped

1 onion, sliced

3 cloves garlic, minced
Seasoning:

3 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

1 tsp dried thyme or rosemary

½ tsp salt

½ tsp black pepper

Pinch red pepper flakes (optional)
Garnish:

Fresh parsley, chopped

INSTRUCTIONS
1. Prep & Preheat

Preheat oven to 400°F (200°C).

Toss all ingredients (except garnish) in a large bowl until evenly coated.
2. Roast to Perfection

Spread on a parchment-lined sheet pan (single layer = crispiness!).

Roast 25 mins, stir, then roast 15-20 mins more until potatoes are golden and sausage is sizzling.
3. Finish & Serve

Sprinkle with parsley and Parmesan.
