¼ cup (60ml) buttermilk (or ¼ cup milk + ½ tsp vinegar)
Instructions
1. Cream Butter & Sugar:

In a large bowl, beat butter and sugar until light and fluffy (~3 mins).

Mix in egg and vanilla.
2. Combine Dry Ingredients:

In a separate bowl, whisk flour, baking soda, baking powder, and salt.

Alternately add dry ingredients and buttermilk to the butter mixture, mixing until just combined.

Cover and chill dough for 1 hour (for easier handling).
4. Bake:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Roll dough into 1-inch balls, flatten slightly, and place on the sheet.
