All the flavors of a Snickers bar—minus the sugar! A rich, creamy keto cheesecake with layers of caramel, peanuts, and chocolate.
Ingredients

For the Crust:

1½ cups almond flour

⅓ cup unsweetened cocoa powder

⅓ cup powdered erythritol (or monk fruit blend)

⅓ cup melted butter (or coconut oil)

1 tsp vanilla extract
For the Cheesecake Filling:

24 oz (3 blocks) cream cheese, softened

1 cup powdered erythritol

3 large eggs, room temperature

1 tsp vanilla extract

½ cup heavy whipping cream

⅓ cup natural peanut butter (no sugar added)
For the “Snickers” Layers:

½ cup sugar-free caramel sauce (store-bought or homemade*)

½ cup roasted salted peanuts (or pecans for lower carbs)

½ cup sugar-free chocolate chips (Lily’s or similar)

2 tbsp coconut oil (for chocolate shell)
Instructions
1. Make the Crust

Preheat oven to 325°F (160°C).

Mix almond flour, cocoa powder, sweetener, and salt. Add melted butter and vanilla, then press into a 9-inch springform pan.

Bake for 10 mins, then cool.
2. Prepare the Filling

Beat cream cheese and sweetener until smooth.

Add eggs one at a time, then mix in vanilla, heavy cream, and peanut butter.

Pour over the crust.
3. Bake & Chill

Bake 45-50 mins until edges are set but center jiggles slightly.
