Sweet, savory, and tropical—juicy pineapple-glazed chicken with colorful veggies, all roasted to perfection on one pan!
Ingredients (Serves 4)
For the Chicken & Marinade:

1.5 lbs boneless, skinless chicken thighs or breasts

⅓ cup soy sauce (or tamari for gluten-free)

¼ cup pineapple juice

2 tbsp honey or brown sugar

2 tbsp ketchup

1 tbsp rice vinegar

2 cloves garlic, minced

For the Sheet Pan:

2 cups fresh pineapple chunks

1 red bell pepper, sliced

1 green bell pepper, sliced

1 red onion, cut into wedges

1 tbsp olive oil

Salt & pepper to taste

1 tbsp sesame seeds

2 green onions, sliced (for garnish)
Optional Serve-Withs:

Cooked rice or quinoa

Instructions
1. Marinate the Chicken

Whisk together soy sauce, pineapple juice, honey, ketchup, vinegar, garlic, ginger, and sesame oil.

Reserve ¼ cup of the marinade for basting.

Add chicken to the remaining marinade; refrigerate 30 mins (or up to 4 hours).
2. Roast the Veggies & Pineapple

Preheat oven to 425°F (220°C).

Toss pineapple, bell peppers, and onion with olive oil, salt, and pepper. Spread on a sheet pan.

Remove chicken from marinade (discard used marinade) and place on top of veggies.
3. Bake & Glaze

Bake for 15 minutes, then brush chicken with reserved marinade.

Bake 10-15 more minutes until chicken reaches 165°F (74°C) and veggies are caramelized.
4. Garnish & Serve

Sprinkle with sesame seeds and green onions.

Serve over rice with extra pan juices drizzled on top.
