Ingredients (serves 4):

4 lobster tails (about 5–6 oz each)

½ cup unsalted butter, melted

4 cloves garlic, minced

1 tbsp lemon juice + extra wedges for serving

2 tbsp fresh parsley, chopped (or cilantro)

1 tsp fresh thyme or rosemary (optional)

Salt & black pepper, to taste
Instructions:

Prep the lobster tails

Using kitchen shears, cut down the top of each lobster shell lengthwise to the tail.

Gently pull the meat up, resting it on top of the shell (but still attached at the base). This is called the piggyback method – it makes grilling easier and prettier.
