Fat-Burning Vegetable Soup with Zucchini & Mushrooms

Ingredients (Serves 4–6)

1 medium onion, diced

2 medium zucchinis, chopped

2 cups mushrooms (cremini or white), sliced

1 large carrot, diced

1 celery stalk, diced

1 (14.5 oz) can diced tomatoes (no salt added)

6 cups low-sodium vegetable or chicken broth

1 tsp ground cumin

½ tsp turmeric (anti-inflammatory)

1 tsp paprika

1 bay leaf

Salt & black pepper to taste

2 cups fresh spinach or kale

1 tbsp lemon juice (or apple cider vinegar)

Optional: Red pepper flakes for heat
Instructions

Sauté veggies: Heat oil in a large pot over medium heat. Add onion and garlic, sautéing for 2–3 minutes until fragrant.

Add vegetables: Stir in zucchini, mushrooms, carrot, and celery. Cook for 5 minutes to soften slightly.

Simmer: Add diced tomatoes, broth, cumin, turmeric, paprika, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until veggies are tender.

Finish with greens: Stir in spinach/kale and lemon juice. Cook for 2 more minutes until greens wilt.

Serve hot: Remove the bay leaf and adjust seasoning. For extra detox benefits, add a splash of apple cider vinegar before serving.
