All the sizzling flavors of fajitas—juicy chicken, peppers, onions, and melty cheese—baked into an easy, one-pan meal!
Ingredients (Serves 6)
Base:
- 2 lbs (900g) boneless chicken breasts or thighs, diced
- 2 bell peppers (any color), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 1 tbsp taco seasoning (or fajita seasoning)
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt & pepper to taste
Cheesy Layer:
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup sour cream (or Greek yogurt)
- 1 (4 oz) can diced green chiles
Toppings:
- 1 cup crushed tortilla chips
- Fresh cilantro, chopped
- Avocado slices
- Lime wedges
Instructions
1. Sauté Fajita Veggies & Chicken
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high. Sauté onions and peppers for 5 mins until soft.
- Add chicken, taco seasoning, cumin, paprika, salt, and pepper. Cook until chicken is no longer pink (~6-8 mins).
2. Mix Cheesy Layer
- In a bowl, combine sour cream, green chiles, and half the cheese.
3. Assemble & Bake
- Spread chicken-pepper mixture in a 9×13″ baking dish.
- Spoon cheesy mixture on top, then sprinkle with remaining cheese and crushed tortilla chips.
- Bake 20-25 mins until bubbly and golden.
4. Serve
- Garnish with cilantro, avocado, and lime juice. Serve with extra chips or warm tortillas!
