- 1 cup (240ml) warm water
- 2 tbsp (30g) brown sugar (or honey)
- 2 tbsp (28g) melted butter (or oil)
- 1 tsp (5g) salt
- 3–3½ cups (360–420g) all-purpose flour
Pretzel Bath:
- 6 cups water
- ¼ cup (60g) baking soda
Topping:
- 1 egg (for egg wash) or melted butter
- Coarse salt (or everything bagel seasoning, garlic powder, etc.)
Instructions
1. Make the Dough
- In a large bowl, mix the sourdough starter, warm water, brown sugar, melted butter, and salt.
- Gradually add flour until a soft, slightly sticky dough forms (about 3–3½ cups).
- Knead for 5–7 minutes until smooth. Cover and let rest for 30 minutes (or ferment longer for more sourdough flavor).
2. Shape the Pretzel Bites
- Divide the dough into 4 pieces. Roll each into a rope (~1-inch thick).
- Cut into 1-inch pieces (no need to roll into perfect balls).
3. Boil (Pretzel Bath)
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Bring 6 cups water + ¼ cup baking soda to a gentle boil.
- Boil dough bites in batches for 20–30 seconds, then remove with a slotted spoon and place on the baking sheet.
4. Bake
- Brush with egg wash (or melted butter) and sprinkle with salt.
- Bake for 12–15 minutes until deep golden brown.
5. Serve
