Easy Chicken Fried Rice Recipe 🍜🍗
This better-than-takeout chicken fried rice is quick, flavorful, and packed with tender chicken, veggies, and fluffy eggs. Ready in 20 minutes!
Ingredients (Serves 4)

2 cups cooked white rice (day-old or chilled works best!)

1 lb (450g) boneless chicken breast or thigh, diced

2 eggs, beaten

1 cup mixed veggies (peas, carrots, corn, diced bell peppers)

3 green onions, chopped
-
3 cloves garlic, minced
-
2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp oyster sauce (optional, for umami)

1 tsp sesame oil
-
½ tsp white pepper (or black pepper)
-
2 tbsp vegetable oil (or peanut oil)

Salt to taste
Optional Add-Ins:

1 tsp ginger, grated

1 tbsp sriracha (for spice)

1 tbsp butter (for extra richness)
Instructions
1️⃣ Prep the rice: Use cold, day-old rice (fresh rice turns mushy). Break up clumps with a fork.
2️⃣ Cook the chicken:

Heat 1 tbsp oil in a wok or large skillet over high heat.

Add diced chicken, season with salt & pepper, and cook until no longer pink (~5 mins). Remove and set aside.
3️⃣ Scramble the eggs:

In the same pan, add a bit more oil if needed. Pour in beaten eggs, scramble until just set, then remove.
4️⃣ Stir-fry veggies & aromatics:

Add remaining oil, then sauté garlic (and ginger if using) for 10 seconds.

Toss in veggies and stir-fry for 2–3 mins until tender-crisp.
5️⃣ Combine everything:

Add rice, chicken, and eggs back to the pan.

Drizzle soy sauce, oyster sauce, and sesame oil over top.

Toss everything on high heat for 2–3 mins until evenly coated and slightly crispy.

Finish with green onions and extra pepper.
Tips for Perfect Fried Rice
✔ Use high heat for that authentic “wok hei” (breath of the wok) flavor.
✔ Day-old rice is key—fresh rice is too moist and sticky.
✔ Customize it: Swap chicken for shrimp, beef, or tofu.
✔ For extra crispiness: Press rice down in the pan and let it sear for 1 min before stirring.
