All the flavors of a loaded potato salad—but low-carb and packed with veggies! Perfect for picnics or meal prep.
Ingredients (Serves 6):
For the Salad:

1 medium cauliflower, cut into small florets (about 4 cups raw)

½ cup diced crispy bacon (about 6 slices)

½ cup shredded cheddar cheese

¼ cup diced red onion (soak in cold water for 10 mins to mellow if preferred)

2 tbsp chopped fresh chives or green onions
For the Dressing:
