🌸 Coconut Cream Dream Cake Recipe
Ingredients:
Cake Layers:

2 ½ cups all-purpose flour

2 ½ tsp baking powder

½ tsp salt

1 ½ cups sugar

¾ cup unsalted butter (room temp)

4 large eggs (room temp)

1 tsp coconut extract (or vanilla)

1 cup coconut milk (canned, full fat)

1 cup shredded sweetened coconut
Coconut Cream Filling:

1 cup heavy cream

½ cup coconut cream (from top of a coconut milk can)

½ cup sugar

3 tbsp cornstarch

1 tsp coconut extract

½ cup shredded coconut
Frosting:

8 oz cream cheese (softened)

½ cup unsalted butter (softened)

4 cups powdered sugar
-
1 tsp coconut extract
-
2–3 tbsp coconut milk
Decoration:

2 cups toasted coconut flakes
Instructions:

Make the Cake Layers:

Preheat oven to 350°F (175°C). Grease and flour 2 or 3 round cake pans.

In a bowl, whisk flour, baking powder, and salt.

In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in coconut extract.

Alternate adding flour mixture and coconut milk, starting and ending with flour. Fold in shredded coconut.

Divide batter evenly into pans, bake 25–30 minutes or until a toothpick comes out clean. Cool completely.

Prepare the Coconut Cream Filling:

In a saucepan, whisk sugar and cornstarch. Slowly whisk in heavy cream and coconut cream.

Cook over medium heat until thickened. Remove from heat, stir in extract and shredded coconut.

Chill until firm.

Make the Frosting:

Beat cream cheese and butter until creamy. Add powdered sugar gradually.

Mix in coconut extract and coconut milk until smooth and spreadable.

Assemble the Cake:

Place one cake layer on a serving plate, spread a generous layer of coconut cream filling. Repeat if using more than 2 layers.

Frost the outside of the cake with coconut cream frosting.
