Classic Southern Fried Green Tomatoes

Ingredients
For the Tomatoes:

3-4 firm green tomatoes, sliced ¼-inch thick

1 tsp salt (for drawing out moisture)

1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)

1 egg (optional, for extra crispiness)
For the Coating:

1 cup cornmeal (fine or medium grind)

½ cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

½ tsp cayenne pepper (optional)

Salt & black pepper to taste
For Frying:

½ cup vegetable oil (or bacon grease for extra flavor)
Instructions
1. Prep the Tomatoes

Sprinkle tomato slices with salt and let sit 10 mins (pat dry with paper towels).

Whisk buttermilk and egg (if using) in a shallow bowl.
2. Make the Coating

In another bowl, mix cornmeal, flour, garlic powder, paprika, cayenne, salt, and pepper.
3. Dredge & Fry

Dip each tomato slice in buttermilk, then coat in cornmeal mixture.

Heat oil in a skillet over medium heat (350°F/175°C).

Fry tomatoes 2-3 mins per side until golden brown. Drain on a wire rack or paper towels.
