2 small chicken breasts (or cutlets)

½ cup flour

1 egg, beaten

1 cup Italian-style breadcrumbs

4 slices thick bread (Italian, sourdough, or Texas toast)

4 slices mozzarella or provolone cheese

½ cup marinara sauce (warm)

2 tbsp grated Parmesan cheese

2 tbsp butter (softened)

Fresh basil or parsley (optional)

1. Prep the Chicken

Pound chicken breasts to even thickness.

Dredge in flour → dip in egg → coat in breadcrumbs.

Pan-fry in oil over medium heat, 3–4 minutes per side, until golden and cooked through.

Slice to fit bread.
2. Assemble the Sandwich

Butter one side of each bread slice.

On the unbuttered side, layer:
