Ingredients
For the Chicken:

2 large chicken breasts (sliced in half lengthwise → 4 cutlets)

1 cup all-purpose flour
-
2 large eggs (beaten)
-
1 cup breadcrumbs (Italian seasoned, or plain with herbs added)

½ cup grated Parmesan cheese
-
1 tsp garlic powder
-
1 tsp Italian seasoning
-
Salt & black pepper, to taste

¼ cup olive oil (for frying)
For Topping:

2 cups marinara sauce (homemade or store-bought)
-
1 cup shredded mozzarella cheese
-
½ cup grated Parmesan cheese
-
Fresh basil or parsley (optional, for garnish)
To Serve (optional):

Cooked spaghetti or other pasta
Instructions
1. Prepare Chicken

Preheat oven to 400°F (200°C).

Pound chicken cutlets to even thickness. Season with salt & pepper.

Prepare breading stations:

Bowl 1: flour
-
Bowl 2: beaten eggs

Bowl 3: breadcrumbs + Parmesan + garlic powder + Italian seasoning

Dredge chicken in flour → dip in eggs → coat in breadcrumb mix.
2. Cook Chicken

Heat olive oil in a skillet over medium-high.

Fry chicken 3–4 minutes per side until golden brown (doesn’t need to be fully cooked through).

Transfer to a baking dish.
3. Assemble & Bake

Spoon marinara sauce over each chicken piece.

Sprinkle with mozzarella + Parmesan.

Bake 15–20 minutes, until chicken is cooked through (165°F / 74°C) and cheese is melted & bubbly.
4. Serve

Plate over spaghetti with extra marinara.

Garnish with fresh basil or parsley.
