Ingredients
-
2 medium yellow squash or zucchini (about 1 lb), sliced into ¼-inch rounds
-
2 tbsp olive oil
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp dried Italian seasoning
-
Salt & black pepper to taste
-
1 cup (113g) shredded mozzarella cheese
-
½ cup (50g) grated Parmesan cheese
-
½ cup (56g) shredded cheddar cheese (optional, for extra richness)
-
2 tbsp chopped fresh parsley or basil (for garnish)
Optional Add-Ins
-
Crumbled cooked bacon
-
Sliced cherry tomatoes
-
Red pepper flakes (for heat)
Instructions
1. Prep the Squash
-
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
-
Toss squash rounds with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until evenly coated.
2. Bake First Round
-
Arrange squash in a single layer on the baking sheet. Bake for 10 minutes until slightly tender.
3. Add Cheese & Finish Baking
-
Sprinkle mozzarella, Parmesan, and cheddar evenly over the squash.
-
Return to oven for 5-7 minutes until cheese is bubbly and golden.
4. Garnish & Serve
-
Top with fresh herbs (and bacon or tomatoes if using). Serve immediately!
Tips
-
Thicker slices (½-inch) will be softer; thinner (¼-inch) will crisp up more.
-
Air fryer option: Cook at 375°F (190°C) for 8-10 mins, adding cheese halfway.
-
Storage: Best fresh, but leftovers can be refrigerated and reheated (texture softens).
Pairs perfectly with grilled chicken, roasted meats, or as a veggie-packed appetizer! 🧀🥒
For a crispy topping: Mix cheeses with ¼ cup panko breadcrumbs before baking! 😊
