For the Provolone Sauce

2 tbsp butter

2 tbsp flour
-
1½ cups (360ml) whole milk

1 cup (240ml) beef broth

2 cups (200g) shredded Provolone cheese

½ cup (50g) grated Parmesan

1 tsp Worcestershire sauce

½ tsp Dijon mustard (optional, for depth)
