Cast Iron Shrimp Scampi
Ingredients:

1 lb (450g) large shrimp, peeled & deveined (tails on optional)

4 tbsp unsalted butter

2 tbsp olive oil

4 cloves garlic, finely minced

½ tsp red pepper flakes (optional, for heat)

½ cup dry white wine (or chicken broth for non-alcoholic)

Juice of 1 lemon + zest

Salt & freshly cracked black pepper, to taste

2 tbsp fresh parsley, chopped

Cooked pasta, rice, or crusty bread (for serving)
Instructions:

Preheat skillet – Place your cast iron skillet over medium-high heat.

Sear shrimp – Pat shrimp dry, season lightly with salt & pepper. Add 1 tbsp olive oil and 1 tbsp butter to the skillet. Once hot, sear shrimp for 1–2 minutes per side until just pink. Remove and set aside.

Make scampi sauce – Lower heat to medium. Add remaining olive oil and butter. Stir in garlic and red pepper flakes, cooking until fragrant (30 seconds).

Deglaze – Pour in white wine (or broth), scraping the bottom of the skillet. Simmer 2–3 minutes until slightly reduced.

Add lemon & shrimp – Stir in lemon juice and zest. Return shrimp to skillet, tossing to coat in sauce. Cook 1 more minute until shrimp are done.
