Ingredients:

3–4 lb beef chuck roast

2 tbsp olive oil

1 large onion, sliced

4 cloves garlic, minced

4 carrots, cut into chunks

4 medium potatoes, cut into chunks

2 cups beef broth

1 cup red wine (or extra beef broth)

2 tbsp tomato paste

2 tbsp Worcestershire sauce

2 sprigs fresh rosemary (or 1 tsp dried)

2–3 sprigs fresh thyme (or 1 tsp dried)

2 bay leaves

Salt & black pepper, to taste
Instructions:

Season & Sear

Pat chuck roast dry and season generously with salt and pepper.

Heat olive oil in a Dutch oven (or large heavy pot).

Sear roast on all sides until browned (about 4–5 min per side). Remove and set aside.

Build Flavor

In the same pot, sauté onion and garlic until softened.

Stir in tomato paste and cook 1–2 min.

Add wine to deglaze, scraping up browned bits.

Return roast to the pot.
