Ingredients:

2 lbs beef stew meat (or chuck roast, cut into chunks)

2 tbsp vegetable oil (or butter)

1 medium onion, chopped

3 garlic cloves, minced

4 cups beef broth

1 tbsp Worcestershire sauce

1 tsp dried thyme (or Italian seasoning)

1 bay leaf

Salt & black pepper, to taste

2 tbsp cornstarch + 2 tbsp water (slurry, for thickening)

12 oz egg noodles (wide or medium)

Fresh parsley, for garnish
Instructions:

Brown the beef: Heat oil in a large pot or Dutch oven. Season beef with salt & pepper, then sear until browned on all sides. Remove and set aside.

Sauté aromatics: In the same pot, add onions and cook until softened. Stir in garlic for 1 minute.

Simmer: Return beef to the pot. Add broth, Worcestershire sauce, thyme, and bay leaf. Cover and simmer on low for 1.5–2 hours, or until beef is tender.

Cook noodles: About 15 minutes before beef is ready, cook egg noodles according to package directions. Drain.
