⏲️ Prep Time: 20 mins | 🍳 Cook Time: 30 mins | 🍽️ Servings: 6 bombs
📝 Ingredients
-
3 large sweet onions (Vidalia or yellow)
-
6 oz sharp cheddar cheese, cut into 6 cubes
-
12 slices bacon (thin-cut works best)
-
2 tbsp BBQ rub (or mix: 1 tsp brown sugar, 1 tsp smoked paprika, ½ tsp garlic powder, ½ tsp salt)
-
¼ cup barbecue sauce (for glaze, optional)
-
Toothpicks (soaked in water 10 mins to prevent burning)
👨🍳 Instructions
1️⃣ Prep the Onions:
-
Cut ½ inch off the top/bottom of each onion and peel. Slice vertically into 6 wedges, keeping the root intact (so layers hold together).
-
Gently pry apart the middle layers to create a cavity for cheese.
2️⃣ Stuff & Wrap:
-
Place a cheddar cube in the center of each onion.
-
Press layers back around the cheese, forming a ball.
-
Wrap each onion tightly with 2 bacon slices, crisscrossing to cover seams. Secure with toothpicks.
-
Sprinkle with BBQ rub.
3️⃣ Cook:
-
Grill method: Indirect heat at 375°F (190°C) for 25–30 mins, basting with BBQ sauce last 5 mins.
-
Oven method: Bake on a rack at 400°F (200°C) for 30–35 mins until bacon is crispy.
4️⃣ Serve:
-
Drizzle with extra BBQ sauce and garnish with chopped chives.
💡 Pro Tips
✔ Pre-cook bacon slightly (2 mins in microwave) for extra crispiness.
✔ Spicy version? Add jalapeño slices inside with the cheese.
✔ Make ahead: Assemble (unbaked) and refrigerate up to 24 hours.
