Apple and Walnut Salad

Ingredients:
For the Salad:

½ cup walnuts, toasted & roughly chopped

¼ cup dried cranberries (optional)

2 tbsp red onion, thinly sliced (optional)
For the Dressing:

3 tbsp extra virgin olive oil

1 tbsp apple cider vinegar (or balsamic vinegar)

1 tsp Dijon mustard

½ tsp salt

¼ tsp black pepper
Instructions:

Toast the walnuts in a dry pan over medium heat for 3-5 minutes until fragrant. Let cool.
