6 cups beef broth (or water + 2 beef bouillon cubes)
-
2 tsp dried thyme
-
2 tsp dried parsley
-
1 bay leaf
-
1 tsp salt (adjust to taste)
-
½ tsp black pepper
For the Homemade Egg Noodles: (or use 12 oz dried egg noodles)
-
2 cups all-purpose flour
-
3 large eggs
-
1 tbsp water
-
½ tsp salt
For the Creamy Finish:
-
1 cup whole milk or half-and-half
-
¼ cup all-purpose flour (for thickening)
-
2 tbsp butter
-
1 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Sear the Beef (Optional but Recommended):
-
Heat olive oil in a large pot or Dutch oven over medium-high heat.
-
Brown the beef chunks in batches until deeply caramelized. Remove and set aside.
2. Slow Cook the Beef & Veggies:
-
In the same pot, sauté onion, carrots, and celery for 5 minutes until softened.
-
Add garlic, cook 1 minute, then return beef to the pot.
-
Pour in beef broth, add thyme, parsley, bay leaf, salt, and pepper.
-
Simmer on low heat for 3-4 hours (or use a slow cooker on Low for 6-8 hours) until beef is fork-tender.
3. Make the Egg Noodles (If Homemade):
-
Mix flour and salt in a bowl, then add eggs and water. Knead into a stiff dough.
-
Roll out thin on a floured surface, then cut into strips. Let dry for 10 minutes.
4. Cook the Noodles & Thicken the Broth:
-
Remove bay leaf from the pot. Bring broth to a gentle boil.
-
Add noodles (homemade or store-bought) and cook for 8-10 minutes until tender.
-
In a small bowl, whisk milk and flour until smooth, then stir into the pot.
-
Simmer for 5 more minutes until slightly thickened. Stir in butter for richness.
5. Serve:
-
Ladle into bowls, garnish with fresh parsley, and enjoy with crusty bread or mashed potatoes.
