Ingredients
For the chicken:

2 lbs boneless, skinless chicken breasts, cut into bite-sized cubes

1 cup cornstarch

2 large eggs, beaten

For the sweet and sour sauce:

¾ cup sugar

½ cup apple cider vinegar (or rice vinegar)

¼ cup ketchup

2 tbsp soy sauce

1 tsp garlic powder
-
1 tsp onion powder
Instructions
1. Prep the chicken

Preheat oven to 325°F (165°C).

Season chicken cubes with salt and pepper.

Dredge chicken in cornstarch, then dip in beaten egg.

Heat oil in a large skillet and sear chicken until golden brown (about 2 minutes per side — it won’t be fully cooked yet).

Transfer chicken to a greased 9×13 baking dish.
2. Make the sauce

In a bowl, whisk together sugar, vinegar, ketchup, soy sauce, garlic powder, and onion powder until smooth.
