Here’s a hearty Cheesy Pork and Rice Skillet recipe – creamy, cheesy, and all cooked in one pan
🥘 Cheesy Pork and Rice Skillet
Ingredients (4 servings):
-
1 lb (450g) ground pork (or diced pork tenderloin/chops)
-
1 cup long-grain white rice (uncooked)
-
1 medium onion, diced
-
2 garlic cloves, minced
-
1 bell pepper, diced
-
1 can (14 oz) diced tomatoes (with juice)
-
2 cups chicken broth (or pork broth)
-
1 tsp smoked paprika
-
1 tsp dried oregano (or Italian seasoning)
-
½ tsp chili flakes (optional, for heat)
-
Salt & pepper, to taste
-
1 ½ cups shredded cheddar cheese (or a mix of mozzarella & cheddar)
-
2 tbsp olive oil or butter
-
Fresh parsley or green onions, for garnish
Instructions:
-
Cook Pork: Heat a large skillet over medium heat. Add oil and brown ground pork (or diced pork) until cooked through. Season lightly with salt and pepper. Remove and set aside.
-
Sauté Veggies: In the same skillet, add onion, garlic, and bell pepper. Cook until softened, about 3–4 minutes.
-
Add Rice & Spices: Stir in the rice, paprika, oregano, and chili flakes. Toast for 1–2 minutes to coat rice with flavor.
-
Simmer: Add diced tomatoes (with juice) and chicken broth. Stir well, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
-
Combine & Cheese: Stir pork back into the skillet. Sprinkle cheese over the top, cover, and let it melt for 2–3 minutes.
-
Serve: Garnish with fresh parsley or green onions. Serve hot right from the skillet.
✨ Creamy, cheesy, and packed with flavor — perfect for a quick weeknight dinner.
