1 tsp vanilla extract

½ tsp cinnamon (optional)

Blend batter
-
Place oats in a blender and pulse until they form a fine flour-like texture.
-
Add eggs, milk, banana, vanilla, baking powder, cinnamon, and salt.

Cook pancakes
-
Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
-
Pour ¼ cup batter per pancake.
-
Cook 2–3 minutes until bubbles form on top, then flip and cook another 1–2 minutes until golden.
-
-
Serve
-
Stack pancakes and serve warm with fresh fruit, honey, or maple syrup.
-
✨ Variations:
-
Add chocolate chips or blueberries to the batter.
-
Swap banana for Greek yogurt for a less sweet but extra fluffy version.
