Ingredients (for two 9-inch layers):
Cake:

2 cups all-purpose flour

2 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 ½ cups sugar

3 large eggs

1 cup crushed pineapple (with juice, not drained)

½ cup sour cream or plain yogurt

1 tsp vanilla extract
Glaze:

1 cup powdered sugar

2–3 tbsp pineapple juice (reserved from can)

1 tbsp melted butter

½ tsp vanilla extract
Instructions:

Preheat oven

Heat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix the batter

In a bowl, whisk flour, baking powder, baking soda, and salt.

In another large bowl, cream butter and sugar until fluffy.

Beat in eggs, one at a time, then add vanilla.

Stir in crushed pineapple and sour cream.
