🧁 Vanilla Cupcakes
Ingredients (makes 12 cupcakes)
For the cupcakes:

1 ¼ cups all-purpose flour

1 ¼ tsp baking powder

¼ tsp salt

½ cup (1 stick) unsalted butter, softened

¾ cup granulated sugar

2 large eggs, room temperature

2 tsp vanilla extract

½ cup whole milk (room temperature)
For the frosting (buttercream):

1 cup (2 sticks) unsalted butter, softened

3–4 cups powdered sugar

2 tsp vanilla extract
-
2–3 Tbsp heavy cream or milk
Instructions

Preheat oven:

Set to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.

Make the batter:

In a bowl, whisk together flour, baking powder, and salt.

In a separate bowl, cream butter and sugar until light and fluffy (2–3 minutes).

Beat in eggs one at a time, then vanilla.

Alternate adding dry ingredients and milk, starting and ending with dry. Mix until just combined (don’t overmix).

Bake:

Divide batter evenly into liners (about ⅔ full).

Bake 18–20 minutes or until a toothpick comes out clean.

Cool completely before frosting.

Make frosting:

Beat butter until creamy.

Gradually add powdered sugar, vanilla, and cream until smooth and fluffy.

Pipe or spread frosting onto cooled cupcakes.
