🍑 Fresh Peach Tartlets Recipe
Ingredients
For the crust (makes about 8 tartlets):

1 ¼ cups all-purpose flour

½ cup (1 stick) unsalted butter, cold and cubed

2 Tbsp granulated sugar

¼ tsp salt
-
3–4 Tbsp ice water
For the filling:

4–5 fresh ripe peaches, peeled and thinly sliced

2 Tbsp honey or sugar (adjust to taste)
-
1 tsp lemon juice
-
½ tsp vanilla extract
-
¼ tsp ground cinnamon (optional)
For glaze (optional, gives shine):

2 Tbsp apricot jam or peach jam, warmed and strained
Instructions

Make the crust:

In a bowl, mix flour, sugar, and salt. Cut in butter until mixture looks like coarse crumbs.

Add ice water 1 Tbsp at a time until dough comes together.

Wrap in plastic and chill 30 minutes.

Prepare peaches:

Toss sliced peaches with honey/sugar, lemon juice, vanilla, and cinnamon. Set aside.

Assemble tartlets:

Preheat oven to 375°F (190°C).

Roll out dough and cut circles to fit mini tartlet pans (or muffin tin). Press into pans and prick bottoms with a fork.

Arrange peach slices neatly on top of the crust.
