Ingredients

1 ½ lbs boneless, skinless chicken breast or thighs, cut into bite-size pieces

1 tbsp vegetable oil (or sesame oil for extra flavor)

1 small onion, diced

1 red bell pepper, diced

2 cloves garlic, minced
-
1 cup pineapple chunks (fresh or canned, drained if canned)

1 cup pineapple juice (from can or fresh)

¼ cup soy sauce (low sodium if preferred)

3 tbsp honey (or brown sugar)

2 tbsp rice vinegar (or apple cider vinegar)

1 tbsp cornstarch + 2 tbsp water (slurry, for thickening)

Instructions
1. Cook the Chicken

Heat oil in a large skillet or wok over medium-high heat.

Add chicken pieces, season lightly with salt & pepper, and cook until golden brown and nearly cooked through. Remove and set aside.
2. Sauté Veggies & Pineapple

In the same pan, add onion, bell pepper, and garlic. Cook 2–3 minutes until softened.

3. Make the Sauce
