Instructions:
1. Prep the Potatoes:

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Scrub potatoes (peel if desired) and cut into 1/4-inch thick fries. Soak in cold water for 10 mins to remove starch, then pat very dry (key for crispiness!).
2. Season & Toss:

In a large bowl, mix fries with olive oil, minced garlic, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
3. Bake Until Crispy:

Spread fries in a single layer on the baking sheet (don’t overcrowd!).

4. Add Parmesan & Finish:
