Classic Oatmeal Raisin Cookies
These chewy, warmly spiced cookies are loaded with plump raisins and hearty oats—perfectly sweet with a hint of cinnamon. A timeless favorite that’s easy to make and impossible to resist!
Ingredients

1 cup (2 sticks) unsalted butter, softened

1 cup packed brown sugar

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 ½ cups all-purpose flour

1 tsp baking soda
-
1 tsp ground cinnamon

½ tsp salt

3 cups old-fashioned rolled oats

1 cup raisins (soaked in warm water for 10 mins, then drained)
Optional Add-Ins:

½ cup chopped walnuts or pecans

½ tsp nutmeg (for extra warmth)
Instructions
1. Preheat & Prep

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Cream Butter & Sugars

In a large bowl, beat butter, brown sugar, and granulated sugar until light/fluffy (~3 mins).

Add eggs one at a time, then mix in vanilla.
3. Combine Dry Ingredients

In a separate bowl, whisk flour, baking soda, cinnamon, and salt.

Gradually add to the wet ingredients, mixing until just combined.
4. Fold in Oats & Raisins

Stir in oats and drained raisins (and nuts, if using).
5. Bake

Drop 2-tbsp portions of dough onto sheets, spacing 2″ apart.

Bake 10–12 mins until edges are golden but centers are still soft.

Let cool on sheets 5 mins, then transfer to a wire rack.
Tips for Perfect Cookies
🍪 Chewier cookies: Bake for 10 mins and let rest on the hot sheet.
🍪 Crispier edges: Bake for 12–13 mins.
🍇 Plumper raisins: Soak in hot water or rum before adding.
