Spicy Shrimp Sushi Stacks 🌶️🍤
All the flavors of sushi—without the rolling! Layers of spicy shrimp, sushi rice, avocado, and crunchy toppings in a fun, easy-to-make stack.
Ingredients (Makes 4 stacks)
For the Sushi Rice:

1 cup sushi rice, rinsed well

1 ¼ cups water

2 tbsp rice vinegar

1 tbsp sugar

½ tsp salt
For the Spicy Shrimp:

1 lb cooked shrimp, chopped

2 tbsp mayo
-
1-2 tbsp sriracha (adjust to taste)

1 tsp soy sauce
-
1 tsp sesame oil
-
1 green onion, finely sliced
For Layering:

1 ripe avocado, diced + lime juice

½ cup cucumber, finely diced

¼ cup carrot, julienned
-
Nori (seaweed) strips
-
Toasted sesame seeds

Pickled ginger (optional)
For Serving:

Soy sauce
-
Extra sriracha
-
Wasabi
Instructions
1. Cook the Rice

Combine rice and water in a pot. Bring to a boil, then simmer covered for 15 mins. Let sit 10 mins.

Mix vinegar, sugar, and salt. Fold into warm rice. Cool slightly.
2. Make Spicy Shrimp

In a bowl, mix shrimp, mayo, sriracha, soy sauce, sesame oil, and green onion.
3. Assemble Stacks

Use a ring mold (or small cup) to layer:

Sushi rice (press down lightly).

Avocado + cucumber.

Spicy shrimp.

Carrot + nori + sesame seeds.

Gently remove mold. Repeat for all stacks.
4. Garnish & Serve

Drizzle with soy sauce and sriracha. Top with pickled ginger (if using).
