A creamy, refreshing pasta salad loaded with tender crab, crisp veggies, and a zesty dressing—perfect for picnics, potlucks, or a light summer meal!
Ingredients:
For the Salad:

12 oz (340g) pasta (rotini, penne, or shells work well)

1 lb (450g) imitation crab meat (or real crab for luxury!), chopped

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/2 cup shredded cheddar cheese (optional)

1 avocado, diced (add just before serving)
For the Dressing:

1/2 cup mayonnaise

1/4 cup sour cream (or Greek yogurt)

2 tbsp lemon juice

1 tsp Old Bay seasoning (or paprika + pinch of cayenne)

1 tsp Dijon mustard

1/2 tsp garlic powder

Salt & pepper to taste
Instructions:

Cook pasta al dente, rinse under cold water, and drain well.

Mix dressing in a bowl until smooth.

Combine pasta, crab, tomatoes, cucumber, red onion, parsley, and cheese in a large bowl.

Fold in dressing until evenly coated.

Chill for at least 1 hour (or overnight for best flavor).
