Mediterranean Baked Fish 🐟🍅
A light, flavorful dish with flaky fish, juicy tomatoes, briny olives, and fresh herbs—ready in 30 minutes!
Ingredients (Serves 4)

4 white fish fillets (cod, halibut, or tilapia)

1 cup cherry tomatoes, halved

½ cup Kalamata olives, pitted & sliced

¼ cup red onion, thinly sliced

2 tbsp capers (optional)

3 tbsp extra-virgin olive oil

2 garlic cloves, minced
-
1 tsp dried oregano (or 1 tbsp fresh)

½ tsp paprika
-
½ lemon, sliced + extra for serving

¼ cup fresh parsley, chopped

Salt & pepper to taste
Instructions

Prep: Preheat oven to 400°F (200°C). Lightly grease a baking dish.

Season Fish: Pat fish dry, place in dish, and drizzle with 1 tbsp olive oil. Season with salt, pepper, and paprika.

Add Toppings: Scatter tomatoes, olives, onion, capers, and garlic over fish. Drizzle with remaining olive oil and sprinkle oregano.

Bake: Top with lemon slices. Bake 15-20 mins until fish flakes easily.
