Ingredients

2 cups fresh corn kernels (or frozen, thawed)

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ red onion, finely chopped

1 avocado, diced (add last)

2 tbsp lime juice (or lemon)

1 tbsp olive oil

½ tsp salt

¼ tsp black pepper

¼ cup fresh cilantro or basil, chopped

1 jalapeño, seeded & minced (optional)

2 tbsp feta cheese (optional)
Instructions
1. Microwave the Corn

Place corn in a microwave-safe bowl with 1 tbsp water.

Cover with a damp paper towel.

Microwave on HIGH for 2-3 mins until tender. Drain.
2. Toss & Serve

In a large bowl, mix warm corn, tomatoes, cucumber, red onion, jalapeño, lime juice, olive oil, salt, and pepper.

Gently fold in avocado (to prevent mushiness) and cilantro.

Sprinkle with feta if using.
