For the Strawberry Buttercream

1 cup (226g) unsalted butter, softened

4 cups (480g) powdered sugar

1/3 cup (80g) strawberry purée*

*To make strawberry purée: Blend 1 1/2 cups fresh strawberries until smooth, then simmer in a saucepan for 10 mins to reduce and thicken. Cool completely.*
Instructions
1. Make the Cake

Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.

Whisk together flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, beat butter and sugar until light and fluffy (~3 mins).

Add eggs one at a time, then mix in sour cream and vanilla.

Alternate adding the dry ingredients and milk, beginning and ending with flour.
