Ingredients (Serves 4)
For the Sausage & Peppers:

4 Italian sausage links (sweet or spicy)

2 bell peppers (red, yellow, or green), sliced

1 large onion, sliced

3 garlic cloves, minced

2 tbsp olive oil

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

½ cup chicken broth

Salt & pepper to taste

2 tbsp fresh parsley, chopped
For the Garlic Mashed Potatoes:

2 lbs (900g) Yukon Gold potatoes, peeled & cubed

4 garlic cloves, minced
-
½ cup (120ml) warm milk
-
4 tbsp (60g) butter
-
½ cup (50g) grated Parmesan cheese

Salt & pepper to taste
Instructions
1. Cook the Sausages

Heat 1 tbsp olive oil in a large skillet over medium heat.

Add sausages and cook for 12-15 mins, turning occasionally, until browned and cooked through. Remove and set aside.
2. Sauté Peppers & Onions

In the same skillet, add remaining oil, bell peppers, and onions. Cook for 10 mins until softened.

Add garlic, Italian seasoning, red pepper flakes, salt, and pepper. Cook for 1 min until fragrant.

Pour in chicken broth and scrape up any browned bits. Simmer for 5 mins until slightly reduced.

Slice the sausages and return them to the skillet. Stir in parsley.
3. Make the Mashed Potatoes

Boil potatoes in salted water until tender (~15 mins). Drain.

In a small saucepan, melt butter with garlic over low heat (1-2 mins).

Mash potatoes with garlic butter, warm milk, Parmesan, salt, and pepper until creamy.
4. Serve

Spoon mashed potatoes onto plates and top with sausage, peppers, and onions.
