Ingredients

Dough:
- 1 cup (240g) active sourdough starter (100% hydration)
- ½ cup (120ml) warm milk (or water)
- ¼ cup (50g) granulated sugar
- ¼ cup (56g) melted butter (or oil)
- 1 large egg
- 1 tsp (5g) vanilla extract
- 1 tsp (5g) salt
- 3–3½ cups (360–420g) all-purpose flour
Filling:
- ½ cup (115g) softened butter
- ¾ cup (150g) brown sugar
- 2 tbsp (15g) cinnamon
- ½ tsp nutmeg or cardamom (optional)
Cream Cheese Glaze (Optional):
- 4 oz (113g) cream cheese, softened
- ¼ cup (56g) butter, softened
- 1 cup (120g) powdered sugar
- 1 tsp (5g) vanilla extract
- 1–2 tbsp milk (as needed)
Instructions
1. Make the Dough
- In a large bowl, mix sourdough starter, warm milk, sugar, melted butter, egg, vanilla, and salt.
- Gradually add flour until a soft, slightly sticky dough forms (about 3–3½ cups).
- Knead for 5–7 minutes until smooth. Cover and let rest for 30 minutes (or refrigerate overnight for extra sourdough flavor).
2. Assemble & Roll
- Roll the dough into a 12×16-inch rectangle.
- Spread softened butter evenly over the dough.
- Mix brown sugar, cinnamon, and nutmeg, then sprinkle over the butter.
- Roll tightly from the long side into a log. Cut into 9–12 even slices.
3. Proof & Bake
- Place rolls in a greased 9×13-inch pan. Cover and let rise 2–4 hours (or overnight in the fridge).
- Preheat oven to 375°F (190°C).
- Bake for 20–25 minutes until golden brown.
4. Glaze & Serve
- Beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
- Drizzle over warm rolls and enjoy!
